Located in the Uco Valley, Altocedro winery prides itself on being terroir-driven with a commitment to cultivating exceptional grapes grown from ancient vines. Head winemaker Karim Mussi Saffie has managed Altocedro since 1999 and he and his team are committed to sustainable agriculture and embracing traditional and low intervention farming practices. ‘La Consulta’ is spontaneously fermented in small concrete vats then aged for 18 months in French Oak barrels. Notes of blueberry, black fruit, and dried herbs are present and are well matched with firm tannins and a savory finish. Pair this full-bodied wine with pork dishes, portobello mushrooms, or blue cheese.
