Simonsberg-Paarl, South Africa
Coming from one of the oldest Cape Dutch farms in Western Cape, South Africa, winemaker Klaas Stoffberg creates delectable wines. The estates first few wines were bottled in 2011, but now they have 94 hectares (232 acres) and produce 13 different varietals. ‘Nebbukadnesar’ is 50% Cabernet Sauvignon, 25% Merlot, 15% Cabernet Franc, 7% Petit Verdot, and 3% Malbec and each of these wines are made separately. They are individually aged in oak barrels for 23 months and are then blended together creating a deep ruby red blend with velvety tannins and notes of blackcurrants, dark berries and plum, dried herbs and tobacco and a touch of smoke. This bold blend can be paired with a venison carpaccio or a rare roast beef with red wine sauce.
