Babylonstoren is one of the oldest Cape Dutch farms in Western Cape, South Africa. Klaas Stoffberg is the current winemaker and bottled the estate's first wines in 2011. They currently have 94 hectares (232 acres) and produce 13 different varietals. 70% of this Viognier is aged in stainless steel tanks while being kept on lees and 30% is aged in oak barrels for 7 months until the two are blended together. Showing notes of white flowers, lime zest, golden apples and cream, this pairs perfectly with a spicy fish curry.
