An incredibly resourceful, holistically minded winery, Balestri Valda is headed by Guido Rizzotto and his daughter Laura, who strive to create beautiful, organic wines. They use solar panels for all electricity and even keep their own bees for pollination. Located at the base of a volcano, the mix of basalt and limestone soils provide a wonderful minerality to the wine. Notes of underripe melon, lemon zest, honeyed pears and jasmine are supported by crisp acidity. Open this one with seared scallops and risotto!
