Like a fine aged whisky or wine, Balsamic growths more valuable as it ages; this one is like liquid gold. Obtained through the traditional long-aging process originated in Modena, Italy, this balsamic vinegar is dark and rich, made from specially selected grapes that are reduced to a must (all the elements of the grapes before fermentation has occurred), and fermented for a year, and left to mature for over 75 years in special wooden casks. The extremely long maturating process makes this particular aged Italian Balsamic vinegar incredibly rare and precious. This rich, full-bodied and smooth Extravecchio (“Extra Old”) inspires reverence amongst the connoisseurs, and should be used with care.
