Bodegas Ponce is a family-owned winery in the Manchuela region of Spain. Juan Antonio Ponce was just 23 years old when he decided to fulfill his dream of opening a winery with the help of his father. In addition to being certified organic, they farm sustainably, are vegan friendly and practicing biodynamic with an emphasis of fermenting their grapes whole cluster, a technique known as remango, made popular in the Rioja region. Made from the Bobal grape (Spain's third most planted red varietal) from vines ranging from 40-60 years old, this wine is aged in wooden vats and shows notes of dark fruit, graphite and beautifully balanced structure and acidity. Pair this wine with roasted rabbit or a hearty rice dish.
