Focusing on high-altitude wines with minimal intervention is a hallmark in Can Sumoi’s production, with the estate focusing on a holistic approach to sustainable viticulture by not only managing their own vineyards but also the forest surrounding their land to help boost the biodiversity and overall health of their environment. This 400-hectare estate prides itself on their recovery efforts for indigenous grapes in the Penedes region of Spain, including this Xarel-lo. This low alcohol wine is fermented using indigenous yeasts in stainless steel tanks, followed by a 3 month aging on the lees. Notes of tropical fruit, green apple, white flowers, and thyme are met with a saline minerality and a lemon peel finish. Pair with fish tacos, fresh salads, and Thai green curry.
