Tucked away just outside the village of Sorbara, the Carafoli family founded this 3rd generation, family-owned winery in 1919, just after WWI had ended. Their 20 hectares of vineyards lie on a small strip of land between the Secchia and Panaro rivers and are rich in nutrients with sandy, clay soils. This is a blend of Salamino and Sorbara varietals and showcases a light and fine bubble. Tasting notes include cherry, raspberry, rose petal and violet. Pair this with any Italian dish, especially ones with parmesan, prosciutto, or balsamic vinegar.
