Château Carbonneau has been an operating vineyard since the 19th century, with an ever-evolving philosophy on winemaking but with a constant goal of producing first-rate wines. Certified organic since 2022, this estate has also been working on converting to entirely biodynamic agriculture, earning a High Environmental Value Level 3 label in 2020. ‘Le Nouveau Souffle’ is a blend of 50% Malbec and 50% Cabernet Franc which undergoes 48 hours of skin maceration followed by a fermentation of the run-off juice with indigenous yeasts. Notes of cherry juice, red currants, and pomegranate are present throughout. Pair with seasonal salads, grilled chicken, and shellfish dishes.
