Tucked away in Saint Emillion is Château Haute-Nauve, which has been family owned for four generations. The certified organic Domaine uses sheep for eco-grazing completely avoiding the use of tractors and allowing them to have a natural maintence of the vines. The vineyards themselves only grow three varietals, all of which are hand harvested: Merlot, Cabernet Franc and Cabernet Sauvignon. This medium-bodied red is made from 100% Merlot grown on 40-year old vines in soil composed of clay, black sand and limestone. Dark blue and red fruits complemented by violets and spices make this a very food friendly wine. Enjoy with various tapas or charcuterie.
