Clos Délice hails from the Castillon-Côtes de Bordeaux region, abutting the prestigious vineyards of St. Emilion Grand Crus on Bordeaux’s right bank. ‘Cuvee de la Mairie’ - named for the fact that it faces the village Town Hall (la Mairie) - is comprised of 90% Merlot and 10% Cabernet Franc from an organically farmed single vineyard. Great care is taken in the cellar  with very small doses of sulfur, fermentation using indigenous yeasts, and light extraction to keep the tannins in balance. Bursting with blueberry, wild berry jam, and rustic plum with notes of rich vanilla from 18 months in oak, this wine pairs beautifully with hard cheeses and grilled mushroom kebabs.
