Clos des Fous was started in 2008 as a passion project that turned into reality by a group of four friends who were determined to break the stigma that Chilean wines are ‘boring.’ Now, they own and manage vineyards all over Chile which allows them to produce multiple varieties while using minimal intervention. Despite their previous stigma, Chile has recently emerged as one of South America’s top wine producers with Cabernet Sauvignon being their most-planted grape. This Cabernet proves just what Chile is capable of, with tasting notes of dark fruit including cherries and blackberries and finishes with a touch of smoke.  This would pair well with beef stir fry!
