Demarie winery, now run by brothers and third-generation winemakers Paolo and Aldo Demarie, has been a pillar in the Piedmont region of Italy since 1957. Certified organic since 2020, the family had been cultivating organically for a decade prior. This medium-bodied wine is fermented with native yeasts in steel or concrete tanks, then is aged in Slavonian oak barrels for eight months. Notes of crushed violets and ripe cherries on the nose are met with notes of ripe strawberry, raspberry, some herbs, and a hint of chocolate in the mouth. Pair with pork loin, hard cheeses, and hearty pasta dishes.
