Run by winemaker Vasco Perdigao, Domaine Chamfort produces top-quality wines using a old vines that produce low yields and enjoy prime southeast exposure. Vasco has been diligently working to shift the estate to become fully sustainable in their farming and production practice and the winery became Certified Organic in 2015. ‘Les Camassots’ is a full-bodied blend of 60% Grenache, 30% Syrah, and 10% Cinsault with each grape variety fermented separately then blended and aged in both oak and concrete vats for 12-18 months. Notes of blackberry, black pepper, and forest floor are present throughout. Pair with lamb stew, three cheese pizza, and truffle omelets.
