Domaine Chiroulet is currently owned by fifth-generation winemaker Philippe Fezas, who took over from his grandparents, Suzanne Capmartin and Albert Fezas, in 1993. A trained agricultural engineer and oenologist, Phillippe has taken Domaine Chiroulet to new heights while practicing regenerative farming, with a particular aim at improving the health of the surrounding environment. ‘Java Blanc’ is a blend of 50% Colombard, 25% Sauvignon Blanc, and 25% Ugni Blanc grown on old vines and fermented in stainless steel tanks. Notes of yellow pears and apples, white flowers, and grapefruit are met with a mineral driven finish. Pair with shrimp tacos with mango salsa or grilled fish.
