Bought in 2010 by winemaker François Moutard, Domaine de la Bretauche had been producing desirable, high quality wines in the popular region of Burgundy for many years prior to it being acquired by Francois. The winemaking process is focused on sustainable farming, hand selecting grapes, and always using indigenous yeast during fermentation. This 100% Chardonnay was fermented for 8 months in a combination of stainless steel and oak and is finished on the lees. Minimal intervention and filtering are used to make sure that the pristine characteristics of this wine are preserved at each point of the process. In your glass expect to find notes of green apple and citrus, pulled together with a mineral driven finish that lingers. Pair with pasta primavera.
