Domaine Fouassier’s Clos Paradis 2023 is a pure, expressive Sancerre from one of the region’s oldest family domaines, now led by tenth-generation cousins Benoît and Paul Fouassier. Farmed biodynamically on limestone-rich soils, the south-facing vineyard captures both ripeness and tension, yielding a Sauvignon Blanc of striking clarity. Aromas of pear and peach, key lime, and white flowers mingle with chalk and wet stone. On the palate, it’s layered and precise. Silky fruit is framed by bright acidity and a lingering finish. Fermented with native yeasts and aged on fine lees for one year, it shows the elegance and vitality that define great Sancerre.
