Blending traditional and modern techniques, Domaine de Haute Perche has committed to organic and biodynamic production in their winemaking practice. Family-owned and founded in the 1960s, this estate continues to have the goal of making their production a “place where passion for wine is tangible at all times”. This bright, high-acid wine was grown in schist and clay soil on organically cultivated 40-year-old vines, then direct pressed and fermented in stainless steel tanks. On the nose you’ll find notes of ripe white fruits, stone fruit, and a hint of citrus. Pair with grilled fish, fresh goat cheese, and crab dishes.
