While winemaker Yves Cheron originally hails from Burgundy (where he also studied enology), he made the journey to the south in 1982 to join his father, Denis Cheron, who had seen the great potential in lesser-known villages of the southern Rhone a couple of decades prior. Since that time, he has developed a deep respect and understanding for the terroir in this region, spread across the foothills of the Montmirail mountains on top of limestone and calcareous soils. Expect notes of black plum, blueberry, tart cherries and gentle touches of sweet tobacco on the finish. Try it with caramelized lamb shanks or aged Gouda.
