Family-owned and operated estate Maison Yves Duport focuses on traditional production techniques blended with modern winemaking methods that allow their terroir-driven wines to shine. Switching to solely organic and biodynamic farming practices in 2007 has given this winery an independence to their viticultural practice. ‘Celine’ is a blend of 40% Chardonnay, 40% Gamay, and 20% Mondeuse which is grown on 25-30 year-old vines in calcareous-clay soil. This blend is direct-press macerated and fermented for 3 weeks in temperature-controlled stainless steel tanks. Notes of candied strawberries and just ripe cherry are met with a fresh acidity. Pair with pearl couscous and lamb.
