This Italian winery has made quite the name for itself by having rediscovered, recovered and redeveloped ancient indigenous varietals of the Friuli region. Emilio Bulfon currently has about 16 hectares, 11 of which are dedicated to the recovered Friulan varietals. Cividin was known as a ‘delicacy’ grape that dates back to the 17th century. It is known for yielding aromatic white wines with a moderate acidity. In the glass, you can expect notes of ripe peach, golden apple, white flowers and a touch of sage. It pairs well with dishes such as risotto with wild herbs or baked sea bass.
