The Ollo de Sapo is a vibrant red from the steep slopes of Galicia’s Ribeira Sacra, made entirely from the native Mencía grape. It was hand-harvested and vinified with care to preserve freshness and varietal clarity. The phrase “Ollo de Sapo” refers to a local metamorphic rock named for its “frog’s eye” appearance, created by large quartz crystals embedded in the stone. The wine’s aromas present with juicy raspberry, cherry and currant fruit, lifted by violet flower, cocoa, and subtle herbaceous notes. The palate is lively and bright, supported by fine tannins, refreshing acidity and a long, slightly spicy finish. With its mineral thread and Atlantic-inspired identity, it pairs naturally with grilled chorizo, roasted pork with herbs and potatoes, or mushroom empanadas.
