This winery was founded in 2003 after the founders experimented for 2 years to see if they could be successful in fulfilling their mission: to cultivate grapes and make wine exclusively from varietals indigenous to Western Sicily. Over the years they have made great efforts to use natural, non-evasive cultivation and treatment techniques including green manure and manual harvesting. This high acid white is made from 100% Inzolia, an acient indigenous varietal of Sicily. You can expect tasting notes of melon, citrus and a touch of chamomile, making this wine an excellent pairing with spaghetti con la bottarga or grilled white fish.
