Francois Chidaine began his wine journey through his father Yves' small vineyard. He decided to further his knowledge by studying viticulture in the mid 1980’s. After his studies, he joined his father and became the head of the Francois Chidaine estate in 1989. Francois turned 4 hectares into 45 hectares and worked hard to become certified organic and biodynamic. He follows Maria Thun’s almanac to perfect the timing of planting and growing the vines. He said, “I consider the vine as a human being. We must not imprison her and always be respectful towards her.” This delicate 100% Chenin Blanc presents notes of minerality from the flinty soils with hints of honeydew, pears, and golden apple. Pair this one with a beet and goat cheese salad or chicken kiev.
