Francois Chidaine began his wine journey through his father Yves' small vineyard. He decided to further his knowledge by studying viticulture in the mid 1980’s, and after his studies, he joined his father and became the head of the now certified organic and biodynamic Francois Chidaine estate in 1989. This medium-bodied wine is pressed whole bunch, fermented spontaneously with native yeasts, and is then aged in stainless steel tanks. Notes of citrus, stone fruit, and white flowers are met with a refreshing minerality. Pair with grilled seafood, sushi, or hard cheeses.
