The Morini family have been grape growers and winemakers for over 40 years; the current generation, made up of seven brothers and cousins who collectively run the estate, has fostered the growth of Latium Morini from 5 into 40 hectares. The grapes are hand-harvested during the first week and a half of October, then undergo a carefully-monitored fermentation; afterwards they undergo a short second fermentation on Amarone grape skins. The additional skin contact gives this wine a fuller structure, and helps drive the rich dark stewed fruit notes, with hints of black cherry and tobacco. Pair with any dish featuring sautéed portabellas!
