Amphibolite is a metamorphic stone generally formed from gabbro or basalt, with a high concentration of iron and magnesium, prevalent in the vineyard, over a bedrock of gneiss.  This wine, made exclusively of hand-harvested grapes, ages sur lie for four months before bottling and in its finished form is high in acids and mineral salts, with complementary flavors of juicy citrus fruit. Drink on its own, or pair with oysters on the shell.
