This estate was founded in 1843 but did not start to flourish until Karl Schaefer took over winemaking and made the winery his namesake. It has been kept in the family and today is owned by sixth generation family members of Schaefer. The property itself has many diverse soil types, allowing them to create many different kinds of wines. This is particulary important because riesling is a varietal in which character can be extremely impacted by terroir. Trocken is German for 'dry' and this wine is a wonderful example of what a dry riesling can be. Petrol on the nose gives way to tasting notes of nectarine and grapefruit creating a high acid, medium bodied white that can be paired with many dishes including spicy cured meats or even shellfish.
