During the height of vine-pulling in the Languedoc, which was meant to lessen France's large wine supply in the early '90s, Moulin de Gassac was born. Aimé Guibert wanted to show the French government, and the world what southern France was capable of producing. The unique terroir allows vines to bathe in warmth and sun, moderated by Mediterranean Sea effects and cool clay-limestone soils. Though still very warm for Pinot Noir, Mas de Daumas seems to evade jammy fruit by producing a balanced Pinot Noir with soft notes of strawberry, cherry, and spice.
