Located in Langhe, Italy, Massimo Rivetti sits among 25 hectares of vineyards, all of which are cultivated organically with no use of pesticides or fertilizers. This nebbiolo was harvested from one of the steepest and highest vineyards in the area, known as the “hero’s vineyard”, because those who work there may not be faint of heart. Harvested in the first 10 days of October, the grapes are then fermented in temperature-controlled steel tanks for 12-15 days. The wine then ages for one year in Slavonian oak barrels and finally rests for 6 months in the bottle. Notes of red fruit, tobacco, white pepper, and dried herbs are met with a lasting finish. Pair this wine with classic bolognese, charcuterie, or red sauce pizza.
