This region sees a long growing season with sunny, bright days and cool nights, creating the perfect conditions for growing quality wine grapes. Pedro Ximenez grapes are typically used in the production of rich Sherries, however this dry expression of the grape is crisp and shows flavors of citrus, lime and river rock minerality, showcasing its true range. Pair it with ceviche or soft, mild cheeses.
