Domaine Pfister lies in the northern part of Alsace and is certified organic and biodynamic with a winegrowing history dating back to the Revolutionary War. Melanie Pfister studied wine all over the world before taking the reins from her father in 2006, but currently works beside him as he prepares to retire-whenever that might be. ‘Paar’ means pair in German and is a nod to the two wines used to make this wine. This white is a blend of Pinot Blanc and Auxxerois varietals which are grown mainly in clay soils and produces citrus and floral notes including lime with a perfect balance of minerality. This wine is great as an aperitif but it also pairs well with pasta and salmon.
