Salento, in southern Apulia (Puglia), Italy, is known for its Mediterranean climate, beautiful coastline, and rich viticultural heritage. The Salento Peninsula forms the "heel" of Italy's "boot." Negroamaro, a red grape variety native to Apulia, is prevalent in Salento and translates to "black bitter" in Italian, reflecting its dark color and slightly bitter flavor. These grapes produce deeply colored, full-bodied wines with rich notes of dark fruits, spices, and earthiness. Harvesting occurs in mid-September, followed by a 10-day temperature-controlled maceration and fermentation process. The wine is aged in stainless steel before bottling, resulting in flavors of black currants, berries, and a hint of thyme. It has a full-bodied, velvety mouthfeel with a savory finish. This wine pairs beautifully with grilled lamb chops and mushroom risotto.
