 Paolo Petrilli is a producer specializing in indigenous varietals, most notably Nero di Troia, in the Puglia region of southern Italy. Dedicated to vegan winemaking practices and organic farming (since 1988!), Paolo Petrilli also grows tomatoes and durum wheat to craft their own pastas and sauces. This Nero di Troia — 80% of which is made in stainless steel and 20% in oak — leads with flavors of blackberry and violets followed by earthy layers of anise, potting soil, and cedar. With its profile of dark fruit and spice, this wine pairs wonderfully with any kind of game, lamb, or pasta with meat sauce.
