Sapaio is located in Italy, near the Etruscan Coast and was started in 1999 when engineer Massimo Piccin decided to quit his career and pursue his passion for wine. His philosophy was simple: create wines that are in harmony with the Bolgheri terroir. Today, the estate has grown to 40 hectares where they not only produce wines, but olive oil as well. This Super Tuscan is blend of Cabernet Sauvignon and Merlot that spends 14 months in French oak before being bottled for 6 months. With tasting notes of dark fruit including blackberry and cherry complemeneted by notes of leather and vanilla, this wine would pair well with roasted game meat or grilled vegetables including eggplant.
