Parajes del Valle is a true embodiment of natural winemaking done right! This small winery was only established in 2018, but they have already made a name for themselves on the international wine scene with young but experienced winemaker Maria Jover at the helm. The certified organic Monastrell grapes come from 4 plots of 15-40 year old vines. They are maintained by the age-old “Terraje" system, meaning that the vineyards are rented out to the farmers, who give back 7% of the production in turn for taking good care of the vines. Maria adds no sulfites to the wine, and while this practice can sometimes create volatility and flaws, the wines of Parajes del Valle manage to avoid this and instead provide a clean, fresh and true expression of the fruit. Red currants, cherries, freshly ground coffee and baking spice, supported by lively acidity. Easy to enjoy all on its own or alongside peppery brisket sandwiches, grilled lamb chops or truffle risotto.
