Paysan is certified organic and lies just off the coast of California in San Benito. The vines here range from 45 to 75 years old and see a typical desert climate of warm days and cold nights which gives the wines a distinct structure and mineral driven body. This red wine is a blend of 92% Cabernet Sauvignon and 8% Petit Verdot with tasting notes of dark black fruit, violet and a hint of spiced herbs. Pair with wild game including duck or dark, rich sauces.
