The team at Pra wines is passionate about the gastronomic traditions of winemaking. They rotate who cooks the family meal each day, they sit down to enjoy food and food-friendly wine together, and they hope that the wine they produce allows patrons to do more of the same. The “Otto” Soave Classico is the youngest of the five white wines in their portfolio. Founder and oenologist, Graziano Pra says, “I am particularly fond of this wine, which was named after the Border Collie that lived with us for fifteen years. Otto is fresh, and ready to drink. Always keep some available.” It is 100% Garganega from the volcanic soils of Monteforte d’Alpone. Floral notes include hawthorne and jasmine, which are accompanied by green apple and almond. Straight from the winemakers, pairing suggestions are Parma ham with fresh cheeses, pasta dishes, risotto with lake fish, and soups of fresh vegetables.
