Owned and operated by Álvaro Castro and his daughter, Maria, this estate nestled in the northern part of the Dāo region of Portugal is family-owned and dates back to the 16th century. Largely considered to have the ideal winegrowing climate, Dāo is protected from cold winds and extreme heat. Their vines grow in granite-heavy soil and the fruit yielded is super concentrated and balanced, with heavy, plush tannins. ‘Quinta de Saes’ is macerated for 10 days, with fermentation taking place with wild yeasts in stainless steel vats for 18 months. Additional aging takes place for 18 months in French oak, giving this wine notes of earthiness, strawberries, bright cherry, and some flint. Pair with roast chicken and umami-based dishes, such as wild mushroom tarts.
