Western Cape, South Africa With a name inspired by the famous novel 'To Kill a Mockingbird', one might expect this bottle to also be serious and brooding, but winemakers Thinus Kruger and Pascal Schildt instead wanted to create wines that were light-hearted and optimistic. 'The Profs' is unoaked, allowing this classic South African varietal's fruit character to shine. Expect notes of plum, dark cherry and spice, and a subtle, smoky finish. Try it with seared lamb shanks, teriyaki or grilled vegetables.
