Family-run for five generations, Vignoble Simian is renowned for their organic and biodynamic viticulture and cultivation practices, becoming Certified Organic in 2011. With roots dating back to the 19th century, this estate grows primarily Grenache, Syrah, Mourvèdre, and Vermentino grapes in their vineyards. ‘Combe Des Avaux’ is a blend of 70% Grenache Noir, 20% Syrah, 5% Cinsault, and 5% Mourvèdre and undergoes spontaneous fermentation in concrete tanks, followed by 18 months of aging in concrete tanks. Notes of cherry, plum, black fruit, and a hint of strawberry are met with easy tannins and a lingering finish. Pair with charcuterie, ratatouille, and beef stew.
