Deglia Ultimi is an organic family owned winery that was inherited by the 2 youngest of 11 children after their father’s untimely death. The property itself is tucked away in the Processo Hills, a World Heritage Site, and Alpine glacier water seeps out of rocks providing natural irrigation for the vines. This bubbly is made from 100% Wildbacher, a varietal native to Austria, and came to Italy in the 18th century. With notes of raspberry, peach and chamomille, you can enjoy this wine year round. Tramonto means ‘sunset’ and that's exactly when this wine should be enjoyed alongside a plate of tuna crudo.
