Founded in 2008 in part to help bring back winemaking traditions of Lipari’s volcanic region, family-owned Tenuta di Castellaro has a special focus on cultivating indigenous grape varieties. Utilizing sustainable viticultural practices, this estate is a certified-organic carbon-neutral winery, going so far as to have solar chimneys and natural cooling systems in place. ‘Bianco Pomice’ is a blend of 60% Malvasia delle Lipari and 40% Carricante and is hand-harvested with fermentation taking place in stainless steel tanks. Notes of citrus, wildflowers, and a touch of almond are met with a hint of salinity. Pair with spaghetti allo scoglio, whipped ricotta, and chicken piccata.
