Winemaker Xose Luis Sebio’s goal with The Flower and The Bee is to introduce native Galician grapes to a broader audience who may not be familiar with them. This organic, hand-harvested Treixadura is a medium-body white wine showing notes of savory herbs and light stone fruits like apricots and white peach; it ferments in stainless steel tanks before bottling. The vineyard is in a unique micro-climate near the Avia river, where the summers are hotter, allowing the grapes to ripen further and produce a lush style of wine. Pair with seared scallops and herbed butter, or any dish featuring red peppers and chevre.
