Calling anyone who considers themselves an appreciator of fine Champagne! Vincent Couche’s aptly named ‘Sensation’ is the result of patient, methodical winemaking, farmed and produced to biodynamic standards (the first winemaker to receive Demeter certification in both the vineyard and his cellar) and spending more than two decades aging on lees in the bottle before being released for consumption. Produced in very small quantities, we were fortunate to be able to try this special Champagne and we knew immediately that it was one we had to share. Beautiful, fine, well-integrated bubbles mingle with notes of dried stone fruit, Meyer lemon, honeyed apple, crushed chalk and toasted brioche. Despite Vincent’s meticulous and labor-intensive methods, a wine this layered, complex and unique is an absolute steal at this price and could easily go head to head with Champagnes commanding two and three times the cost. Get it before it’s gone!
