This Spanish winery specializes in making their wines with indigenous Spanish varietals and owner and winemaker Michael Cooper prides himself on their organic and sustainable practices. Their vineyards are dry-farmed, do not use any pesticides and their bottles are made from recycled materials. This red is made from a blend of Garnacha, Graciano, Syrah and Cabernet Sauvignon and is grown on old vines in high altitude vineyards. With notes of black fruit, thyme, lavender and crushed black pepper, this wine pairs well with roasted lamb or grilled vegetables.
