Cuvée Racines de Trois represents the “three roots” of Waris-Larmandier: the contribution of the three siblings to the project, and their use of three grape varieties (Chardonnay, Pinot Noir, and Meunier), coming from three regions of Champagne (Côte des Blancs, Montagne de Reims, and Côte des Bar). All grapes are hand-harvested before a traditional pressing, where the free-run juice is used for primary fermentation in stainless steel tanks with native yeast, followed by spontaneous malolactic fermentation. 24-36 months of sur-lie aging in bottle after the second fermentation lends the traditional characteristics of bread dough and toast, complementing the bright acidity and citrus profile. Drink on its own or with soft, salty cheese.
